Ingredients
- 1-1/2 pounds boneless, skinless chicken breast, uncooked
- 2聽green onions
- 2 celery stalks聽
- 3聽medium mandarin oranges
- 1/2聽cup low-fat mayonnaise聽
Preparation
- Preheat oven to 350掳 F.
- Arrange chicken in a baking pan and bake until done, approximately 45 minutes. Remove cooked chicken from oven and let cool.
- Chop chicken into fine pieces and place in a large bowl. Finely chop green onions and celery.聽Peel mandarin oranges.
- Add green onions, celery and mayonnaise to chicken.聽Mix well. Chill until ready to serve.
- Before serving, cut mandarin orange section in聽half and fold into the chicken salad.

- Serve over mixed salad greens, on bread or rolls as a sandwich, or聽as a spread on crackers for a high protein snack.
- Substitute 1 cup drained, canned mandarin oranges if fresh fruit is unavailable.
- To increase the protein content of this recipe for people on a high protein diet, 1/4 cup of protein powder may be added.
