Helpful hints

  • Rotini is also known as corkscrew pasta.聽Three ounces dry (3/4 cup) yields聽1-1/2 cups cooked. This recipe calls for whole wheat but you can substitute refined rotini if desired. Potassium and phosphorus will be slightly lower.
  • You can bake boneless, skinless chicken breast or tenderloins in a 425掳F oven for 18-25 minutes or until the internal temperature reaches 165掳F. Pound the breasts to an even thickness for more even cooking.
  • Adjust聽the amount of chicken for a lower or higher protein meal.
